What is hard cider?
Hard cider is an alcoholic beverage made from the fermented juice of apples. Cider is similar to beer in that the alcohol content ranges from 4% to 10% ABV. However, unlike beer, cider is naturally gluten free. Since cider is made from fruit, cider production falls under the same license as wine.
Why Dry?
Most people are used to hearing the term dry in reference to white wine. The same term can also be used to describe cider. If an alcoholic beverage is referred to as dry, that usually means that the fermentation process has gone to the point that most, if not all, of the sugar has been converted into alcohol. This is done for two main reasons: one because it gives the desired alcohol content without using additives, and two because we find it allows you to enjoy the flavors of the fruit without enduring that “sugary headache” you might get from other sweeter products.

why light Carbonation?
Carbonation or bubbles are a natural side effect of the fermentation process. However, the extra bubbly effect you find in soda, sparkling water, and larger commercially produced cider is a product of something called forced carbonation. Forced carbonation is when the liquid is cooled to a low temperature and CO2 gas is pushed through. We choose to use a mixture of both methods but err on the side of lighter carbonation, which may be less than what you are used to. We feel that once you get used to it you will come to prefer the lighter carb, as it tends to be easier on your palate and is smoother drinking.
Why Raw and Unfiltered?
We believe in using traditional methods with the freshest ingredients possible. So we do not feel the need to over-process our product once it is finished. In fact, we embrace that some of our cider is foggier, while some is crystal clear. The pink, red, and purple colors you see in our cider is from from the fruit itself. We never add dye, artificial flavoring, or high fructose corn syrup to anything we produce. As a result our product is naturally probiotic, gluten free, raw, vegan, and almost completely sugar free.
